- 1–2 serrano peppers
- ½ medium yellow onion
- 2 garlic cloves
- ¼ cup cilantro, roughly chopped
- 2 tablespoons freshly squeezed lime juice

- ¼ teaspoon granulated sugar (optional)
Instructions
- Preheat broiler to 500°F.
- Place tomatoes, jalapeños, serrano peppers, onion, and garlic on baking pan under broiler.
- Broil vegetables, turning every 2 to 3 minutes until charred.
- Transfer roasted vegetables to a blender.
- Blend until nearly smooth.
- Adjust seasoning with lime juice and salt; add optional sugar if desired.
- Serve warm or chill before serving.
Notes
Choose ripe Roma tomatoes for the best flavor.
Do not skip the broiling step for authentic taste.
Adjust spiciness by varying the number of jalapeños or serrano peppers.
