- 1 ½ cups (3 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 ½ teaspoons almond extract
- 1 large egg
- 3 cups all-purpose flour, spooned and leveled
- ¼ teaspoon baking powder

- 1 cup seedless raspberry jam (or more to taste)
- ½ cup (1 stick) unsalted butter, melted
- ¾ cup granulated sugar
- ¾ cup all-purpose flour, spooned and leveled
- ¾ cup sliced almonds (or more to taste)
Instructions
- Preheat oven to 375°F and prepare a 9×13-inch baking pan.
- Blend softened butter until creamy, then mix in sugar until fluffy.
- Add almond extract and egg, then combine.
- Mix dry ingredients in a separate bowl, then add to wet mixture.
- Press dough into pan and refrigerate for 20 minutes.
- Bake for 15-20 minutes until barely golden, then lower temperature to 350°F.
- Melt butter for topping and mix with sugar and flour.
- Spread raspberry jam over baked crust.
- Fluff crumb topping and mix in sliced almonds, then sprinkle over jam.
- Bake at 350°F for 25-30 minutes until golden, then cool before slicing.
Notes
Use room temperature butter for easier mixing.
Increase almond extract for a stronger flavor.
Cool bars completely for easier slicing.
