Instructions
- Heat a skillet over medium-high heat and add bacon; cook until crispy.
- Remove bacon and sauté garlic and shallots in the bacon grease until fragrant.
- Add frozen peas and carrots, cooking until tender, around 4-5 minutes.
- Stir in butter, thyme, salt, and pepper, cooking for an additional 1-2 minutes.
- Top with crispy bacon and serve hot.
