Ingredients

  • 2 ¼ cups organic all-purpose flour
  • 2 ½ cups organic bread flour
  • 1 cup organic rolled oats
  • 1 packet rapid rise yeast
  • 1 ½ cups unsweetened almond milk, at room temp
  • 3 tablespoons organic cane sugar
  • 1 tablespoon organic brown sugar
  • ¼ cup warm water
  • ¾ cup organic pumpkin puree, room temp (not pie filling)
  • 1 teaspoon vanilla extract
  • 1 teaspoon sea salt
  • 1 teaspoon homemade pumpkin spice blend
  • 2 quarts water
  • 4 tablespoons pure maple syrup
  • 1 large egg
  • 1 tablespoon unsweetened almond milk (or any milk of your choice)

Instructions

  • Activate the yeast by combining yeast and brown sugar, then adding warm water. Let sit for 10 minutes.
  • Combine the wet ingredients: almond milk, pumpkin puree, and vanilla extract.
  • Mix dry ingredients: whisk together flours, oats, sugar, pumpkin spice, and sea salt.
  • Gradually combine wet and dry ingredients, knead until smooth, then let rise for an hour.
  • Preheat oven to 400°F and prepare a baking sheet.
  • Roll out dough, cut into bagels, and prepare a water bath with maple syrup.
  • Boil bagels for 1 minute on each side, then transfer to baking sheet.
  • Brush with egg wash, let rise for another 15-20 minutes, then bake for 20 minutes.
