Ingredients

  • 1/3 cup water
  • 1/3 cup granulated sugar
  • 1 cinnamon stick
  • 34 whole cloves
  • 34 whole allspice
  • 4 cups cold water
  • 3/4 cup coarsely ground coffee
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 4 tablespoons simple syrup (made from above)
  • 2 tablespoons pumpkin puree (canned)
  • A dash or two of pumpkin pie spice (optional)
  • Ice cubes

Instructions

  • Combine water, sugar, cinnamon stick, cloves, and allspice in a pot. Heat until sugar dissolves.
  • Remove from heat, cool to room temperature, and strain to store simple syrup.
  • In a container, add coarsely ground coffee and cold water. Stir and refrigerate for 12 to 18 hours.
  • In a mason jar, mix heavy cream, milk, prepared simple syrup, and pumpkin puree. Shake until blended.
  • Fill glasses with ice cubes, pour in cold brew, and top with pumpkin cream foam.

Notes

Use freshly ground coffee for the best flavor.
Adjust syrup amount in cream for desired sweetness.
Store leftover simple syrup in the fridge for up to a month.
