- 1 cup butter (2 sticks)
- 1 tablespoon pumpkin pie spice
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 (8-oz) cup canned pumpkin (not pumpkin pie filling)
- 2 teaspoons vanilla extract
- 1/2 teaspoon kosher salt
- 1 large egg
- 2 cups all-purpose flour (spooned and leveled)
- 1 teaspoon baking powder
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
Instructions
- Preheat the oven to 350°F and prepare a 9×13 inch baking pan.
- Melt 1 cup of butter in a medium saucepan over medium heat.
- Add 1 tablespoon of pumpkin pie spice to the melted butter and toast for a minute.
- Stir in 1 cup of granulated sugar, 1 cup of packed brown sugar, and 1 cup of canned pumpkin.
- Mix in 2 teaspoons of vanilla extract, 1/2 teaspoon of kosher salt, and 1 large egg until smooth.
- Gently incorporate 2 cups of flour and 1 teaspoon of baking powder; do not overmix.
- Fold in 1 cup each of semisweet and dark chocolate chips.
- Pour into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool and slice into squares.
Notes
Using room temperature ingredients helps blend everything nicely.
Avoid overmixing for soft and fudgy bars.
