- 2 large eggs, beaten

- 2 tablespoons butter, for frying
- 2 tablespoons oil, for frying
- Fresh dill, chopped, for garnish
Instructions
- Combine leftover mashed potatoes, beaten eggs, flour, green onions, chives, salt, and pepper in a bowl until well mixed.
- Shape the mixture into 6-8 patties, adding more flour if the mixture is too loose.
- Preheat a skillet over medium-high heat with butter and oil.
- Fry each patty for 3-4 minutes on each side until golden brown.
- Transfer to paper towels to drain excess oil.
- Garnish with fresh dill and serve hot.
Notes
Ensure your leftover mashed potatoes are well-seasoned for better flavor.
If patties don’t hold together, gradually add more flour until the right consistency is achieved.
