- 170g (6 oz) dark chocolate (60-70% cocoa), chopped
- 115g (1/2 cup) unsalted butter
- 150g (3/4 cup) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 65g (1/2 cup) all-purpose flour
- 2 tbsp unsweetened cocoa powder
- 1/4 tsp salt
- 200g (7 oz) cream cheese, softened
- 50g (1/4 cup) granulated sugar (for cheesecake layer)
- 1 egg (for cheesecake layer)
- 1/2 tsp vanilla extract (for cheesecake layer)
- 2 tbsp pistachio paste or 3 tbsp finely ground pistachios
- 3 tbsp chopped pistachios (for topping)
Instructions
- Preheat oven to 350°F (175°C).
- Melt chocolate and butter together over simmering water.
- Allow melted mixture to cool slightly, then whisk in sugar and eggs.
- Mix in vanilla extract, followed by sifted dry ingredients.
- In a separate bowl, combine cream cheese and sugar until smooth.
- Add cheesecake layer ingredients and blend well.
- Spread brownie batter in a lined baking pan, pour cheesecake layer on top, and dollop remaining brownie batter.
- Swirl layers gently with a knife and top with chopped pistachios.
- Bake for 30-35 minutes until set. Cool in the pan for 10 minutes, then refrigerate for 1-2 hours before slicing.
Notes
Ensure all ingredients are at room temperature for better mixing.
Avoid overmixing the batter to keep brownies fudgy.
Use high-quality dark chocolate for enhanced flavor.
