  • 115g (1/2 cup) unsalted butter
  • 150g (3/4 cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 65g (1/2 cup) all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1/4 tsp salt
  • 200g (7 oz) cream cheese, softened
  • 50g (1/4 cup) granulated sugar (for cheesecake layer)
  • 1 egg (for cheesecake layer)
  • 1/2 tsp vanilla extract (for cheesecake layer)
  • 2 tbsp pistachio paste or 3 tbsp finely ground pistachios
  • 3 tbsp chopped pistachios (for topping)

Instructions

  • Preheat oven to 350°F (175°C).
  • Melt chocolate and butter together over simmering water.
  • Allow melted mixture to cool slightly, then whisk in sugar and eggs.
  • Mix in vanilla extract, followed by sifted dry ingredients.
  • In a separate bowl, combine cream cheese and sugar until smooth.
  • Add cheesecake layer ingredients and blend well.
  • Spread brownie batter in a lined baking pan, pour cheesecake layer on top, and dollop remaining brownie batter.
  • Swirl layers gently with a knife and top with chopped pistachios.
  • Bake for 30-35 minutes until set. Cool in the pan for 10 minutes, then refrigerate for 1-2 hours before slicing.
