  • 1½ cups water
  • 1 (8 oz.) can crushed pineapple in its juice (1 cup)
  • 2 tsp. sugar
  • 1 Tbsp. unsalted butter
  • ½ tsp. kosher salt
  • ¼½ tsp. red pepper flakes
  • 1 cup basmati or jasmine rice (not quick-cooking)
  • Juice of ½ lime (about 1 Tbsp.)
  • Fresh cilantro, chopped

Instructions

  • Combine water, crushed pineapple, sugar, unsalted butter, kosher salt, and red pepper flakes in a saucepan.
  • Bring the mixture to a simmer over medium heat.
  • Stir in the basmati or jasmine rice and return to a simmer.
  • Reduce heat to low and simmer, partially covered, for 12-15 minutes until water is absorbed.
  • Remove from heat and let the rice steam covered for 5 minutes.
  • Fluff the rice with a fork and stir in lime juice and chopped cilantro.

Notes

Use high-quality basmati or jasmine rice for the best flavor.
Adjust red pepper flakes to suit your heat preference.
Letting the rice steam off heat is key for ideal texture.
