- 1½ cups water
- 1 (8 oz.) can crushed pineapple in its juice (1 cup)
- 2 tsp. sugar
- 1 Tbsp. unsalted butter
- ½ tsp. kosher salt
- ¼ – ½ tsp. red pepper flakes
- 1 cup basmati or jasmine rice (not quick-cooking)
- Juice of ½ lime (about 1 Tbsp.)
- Fresh cilantro, chopped
Instructions
- Combine water, crushed pineapple, sugar, unsalted butter, kosher salt, and red pepper flakes in a saucepan.
- Bring the mixture to a simmer over medium heat.
- Stir in the basmati or jasmine rice and return to a simmer.
- Reduce heat to low and simmer, partially covered, for 12-15 minutes until water is absorbed.
- Remove from heat and let the rice steam covered for 5 minutes.
- Fluff the rice with a fork and stir in lime juice and chopped cilantro.
Notes
Use high-quality basmati or jasmine rice for the best flavor.
Adjust red pepper flakes to suit your heat preference.
Letting the rice steam off heat is key for ideal texture.
