- 1/2 cup Vegetable Oil
- 1 (11 oz) can Mandarin Oranges, with juice
- 3 large Eggs
- 12 oz Cool Whip
- 1 (15 oz) can Crushed Pineapple, thoroughly drained
- 1 (3.4 oz) package Instant Vanilla Pudding Mix
Instructions
- Preheat the oven as per cake mix instructions.
- Spray a 9 x 13-inch baking pan with non-stick spray.
- Combine cake mix, vegetable oil, mandarin oranges (with juice), and eggs in a bowl; mix until smooth.
- Pour the batter into the prepared pan and bake as directed on the cake mix box.
- Cool the cake completely.
- In another bowl, mix Cool Whip, drained crushed pineapple, and vanilla pudding until smooth.
- Spread the topping over the cooled cake.
Notes
Drain the crushed pineapple thoroughly to avoid sogginess.
Use room temperature eggs for a smoother batter.
