Instructions
- Preheat oven to 350°F and prepare an 8×8 or 9×9-inch pan with parchment paper.
- Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a bowl; press mixture into the pan.
- Blend cream cheese, ½ cup sugar, sour cream, and vanilla until smooth; add eggs slowly to combine.
- Pour filling over crust and bake for 25-35 minutes until center has a slight jiggle; cool on wire rack.
- For sauce, mix strawberries, sugar, water, lemon juice, and cornstarch in a saucepan; boil and thicken.
- Slice cooled bars and top with strawberry sauce; optionally drizzle with melted white chocolate.
