These bars offer a creamy balance of peanut butter and Greek yogurt, making them a guilt-free snack perfect for summer days or a late-night treat.

Ingredients

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts (optional)
  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  • Line a baking sheet with wax paper or a silicone mat.
  • In a bowl, mix Greek yogurt, peanut butter, maple syrup or honey, and vanilla until smooth.
  • Place 4-6 mounds of mixture on the lined baking sheet.
  • Insert popsicle sticks into each mound.
  • Top with remaining yogurt mixture and flatten slightly.
  • Sprinkle peanuts on top if using.
  • Freeze for at least 2 hours until solid.
  • Melt chocolate chips with coconut oil in the microwave.
  • Dip each frozen bar into the melted chocolate.
  • Return to the baking sheet and allow to set.
  • Enjoy immediately or return to the freezer for later.

Notes

For a dairy-free version, swap regular yogurt for plant-based yogurt.
Wrap leftovers in wax paper for easy snacking.
Let bars sit for a few minutes after removing from freezer for easier biting.
