Ingredients

- 1 cup plain Greek yogurt
- ½ cup creamy peanut butter
- 1 tablespoon maple syrup or honey
- 1 teaspoon vanilla extract
- 2 tablespoons roasted and salted peanuts (optional)
- 1 cup chocolate chips or chopped chocolate (6 oz.)
- 2 tablespoons coconut oil
Instructions
- Line a baking sheet with wax paper or a silicone mat.
- In a bowl, mix Greek yogurt, peanut butter, maple syrup or honey, and vanilla until smooth.
- Place 4-6 mounds of mixture on the lined baking sheet.
- Insert popsicle sticks into each mound.
- Top with remaining yogurt mixture and flatten slightly.
- Sprinkle peanuts on top if using.
- Freeze for at least 2 hours until solid.
- Melt chocolate chips with coconut oil in the microwave.
- Dip each frozen bar into the melted chocolate.
- Return to the baking sheet and allow to set.
- Enjoy immediately or return to the freezer for later.
Notes
For a dairy-free version, swap regular yogurt for plant-based yogurt.
Wrap leftovers in wax paper for easy snacking.
Let bars sit for a few minutes after removing from freezer for easier biting.
