- 3 cups all-purpose flour
- 1½ cups granulated sugar
- ½ cup cocoa powder (not Dutch processed)
- 2 tsp ground cinnamon
- 2 tsp baking soda
- 1 tsp salt
- 3 large eggs
- 1 cup canola oil
- 2 tsp vanilla extract
- 4 cups grated zucchini (about 2 medium zucchinis)
- ¾ cup chocolate chips
- 1 cup confectioners' sugar
- ¼ cup peanut butter
- 2–3 tbsp milk
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and prepare loaf pans.
- Sift together dry ingredients in a large bowl.
- Whisk wet ingredients in a separate bowl.
- Combine wet ingredients into dry ingredients until blended.
- Fold in grated zucchini and chocolate chips.
- Divide batter into prepared loaf pans.
- Bake for 60-80 minutes or until a toothpick comes out clean.
- Prepare peanut butter drizzle and mix until smooth.
- Drizzle over cooled loaves before serving.
Notes
Ensure zucchini is well-drained to avoid sogginess.
Adjust baking time based on your oven’s performance.
Store covered at room temperature for up to 3 days.
