- 6 cups (20–26 oz) peeled and shredded zucchini
- 20 oz can pineapple in juice (crushed, tidbits, or chunks)
- 1 (1.75 oz) box Sure-Jell or equivalent
- 5 cups (1000 g) sugar
- 6 oz box Peach flavored Jell-o
Instructions
- Combine shredded zucchini and pineapple in a large pot and bring to a boil for 3-5 minutes.
- Add Sure-Jell and return to a rolling boil while stirring.
- Stir in sugar and any remaining crushed pineapple, boil for another 5 minutes.
- Remove from heat and dissolve peach Jell-O by stirring for 1-2 minutes.
- Pour the jam into sterilized jars, clean the rims, seal with lids.
- Process jars in a boiling water bath for 20 minutes.
- After processing, let jars rest for 24 hours to seal properly.
- Check seals and store in a cool, dry place.
