- ½ cup (100 g) light brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons (10 ml) vanilla extract
- ¾ cup (180 g) sour cream
- ¼ cup (60 ml) milk
- 1 cup (120 g) powdered sugar
- 1 teaspoon vanilla extract
- 2 – 3 tablespoons (30 – 45 ml) milk
Instructions
- Combine diced peaches with sugar, cinnamon, and ginger or nutmeg; let sit.
- Whisk together flour, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Cream butter and sugars together, then add eggs and vanilla extract.
- Gradually mix wet and dry ingredients, alternating with sour cream and milk; fold in peaches.
- Fill muffin liners with batter and bake at 400°F (205°C) for 18-22 minutes.
- Whisk together glaze ingredients and drizzle over cooled muffins.
Notes
Use ripe, fresh peaches for best flavor.
Avoid over-mixing to keep muffins light and fluffy.
Allow muffins to cool before glazing to maintain appearance.
