Instructions

  • Prepare the peach puree by blending diced peaches with lemon juice until smooth.
  • Combine gelatin and sugar with cold water in a saucepan, let sit, then heat until dissolved.
  • Mix the gelatin mixture into the peach puree; refrigerate until it thickens.
  • Whip heavy cream until stiff peaks form, then gently fold into the peach mixture.
  • Divide the mousse into serving dishes and refrigerate until set.
  • Prepare the topping by boiling sliced peaches with sugar and lemon juice, then cool.
