- 1 ripe peach, peeled and thinly sliced (for topping)
- Mint leaves, optional garnish
Instructions
- Prepare the peach puree by blending diced peaches with lemon juice until smooth.
- Combine gelatin and sugar with cold water in a saucepan, let sit, then heat until dissolved.
- Mix the gelatin mixture into the peach puree; refrigerate until it thickens.
- Whip heavy cream until stiff peaks form, then gently fold into the peach mixture.
- Divide the mousse into serving dishes and refrigerate until set.
- Prepare the topping by boiling sliced peaches with sugar and lemon juice, then cool.
- Top each mousse serving with the peach topping and garnish with mint.

Ensure the whipped cream is whipped to stiff peaks.
