- 1/4 cup champagne vinegar
- 1/2 cup olive oil
- 1/2 tablespoon Dijon mustard
- 2 teaspoons honey
- 1/2 teaspoon minced garlic
- Salt and pepper to taste
- 2 ripe peaches, sliced
- 1 cup cherry tomatoes, halved
- 8 ounces burrata cheese
- 2–3 basil leaves, sliced into small ribbons
Instructions
- Combine champagne vinegar, olive oil, Dijon mustard, honey, minced garlic, salt, and pepper in a jar.
- Shake the jar well to mix the ingredients for the vinaigrette.
- Taste and adjust seasonings as needed before refrigerating.
- Arrange sliced peaches and halved cherry tomatoes in a shallow bowl.
- Break apart the burrata cheese and place it on top of the peach and tomato mix.
- Drizzle the champagne vinaigrette generously over the salad.
- Top with basil ribbons and serve immediately.
Notes
Choose peaches that are fragrant and slightly soft for the best flavor.
Let the vinaigrette rest in the fridge for better flavor melding.
Feel free to garnish with additional basil or flaky sea salt for enhancement.
