Instructions

  • Mix flour, sugar, salt, and butter until crumbly.
  • Stir in ice water and vinegar until a scrappy dough forms.
  • Chill the dough for 30 minutes.
  • Slice the peach and prepare cream cheese.
  • Mix honey, lemon juice, cinnamon, and ginger.
  • Preheat the oven to 425°F and roll out the dough.
  • Cut dough into squares and shape them for tarts.
