- 1 cup all-purpose flour + 2 Tbsp (135g total)
- 2 Tbsp milk
- 50g grated Parmesan, plus more for dusting
- 1/4 tsp nutmeg
- 1 1/2 tsp baking powder
- 1 tsp chili flakes (optional)
- 1 egg
- 1/2 tsp sea salt or a generous pinch of table salt
- Oil for frying
Instructions
- Steam fresh pumpkin until tender; puree and set aside.
- Combine pumpkin puree, flour, milk, Parmesan, nutmeg, baking powder, chili flakes, egg, and salt in a mixing bowl.
- Heat oil to 170°C (340°F) in a high-sided saucepan.
- Shape the batter into rough balls and fry in small batches.
- Fry for 2-3 minutes on each side until golden brown.
- Drain on paper towels and add more Parmesan before serving.
Notes
Avoid overcrowding the frying pan to maintain oil temperature.
Feel free to adjust spice levels based on personal preference.
To keep the donuts crispy, ensure proper frying temperatures.
