Instructions

  • Steam fresh pumpkin until tender; puree and set aside.
  • Combine pumpkin puree, flour, milk, Parmesan, nutmeg, baking powder, chili flakes, egg, and salt in a mixing bowl.
  • Heat oil to 170°C (340°F) in a high-sided saucepan.
  • Shape the batter into rough balls and fry in small batches.
  • Fry for 2-3 minutes on each side until golden brown.
  • Drain on paper towels and add more Parmesan before serving.
