- 1 tablespoon olive oil
- 1 shallot, peeled and diced
- 3 cloves garlic, pressed or minced
- 2 cups sweet peas (raw or frozen)
- ¼ cup aged parmesan, freshly grated (plus more for serving)
- Sea salt, to taste
- Black pepper, to taste
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Sauté shallots for 3-4 minutes until golden.
- Add garlic and cook for 1 minute.
- Mix in sweet peas and sauté for 5-7 minutes.
- Remove from heat and stir in parmesan until melted.
- Season with salt and pepper to taste.
Notes
Squeeze fresh lemon juice before serving for added flavor.
Avoid overcooking peas to retain their crunch.
