Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Slice the carrots into ½ inch rounds and toss with olive oil and seasonings.
- Mix in ¼ cup of parmesan cheese until evenly coated.
- Spread the remaining ½ cup of parmesan on the baking sheet and arrange the carrots on top.
- Roast for 20-25 minutes until tender and golden.
- Drizzle with hot honey if desired and let cool before serving.
