- ¼ cup sugar (divided (2oz., 50g))
- 1 tbsp active dry yeast
- ¼ cup warm water (warmed to 105°f-110°f)
- 1 cup milk (8oz. warmed to 105°f-110°f)
- 1 stick unsalted butter (divided)
- 4½ cups all-purpose flour (675g, plus dusting)
- 1 tsp salt
- 2 eggs
Instructions
- Prepare all ingredients and spray a 9×13 dish with nonstick spray.
- In a small bowl, combine ⅛ cup sugar, active dry yeast, and warm water. Let it sit for at least 5 minutes until foamy.
- In a saucepan, warm the milk and 4 Tbsp of butter over medium-low heat until just melted. Let it cool if too hot.
- In a large bowl, mix ½ cup flour, salt, and remaining sugar.
- Add the milk mixture, yeast, and eggs. Combine until smooth with a rubber spatula.
- Gradually add flour, ½ cup at a time, mixing until too thick. Use your hands to combine when it gets difficult.
- Knead the dough on a floured surface for 10 minutes until smooth and elastic. Use flour on your hands if the dough is sticky.
- Place the dough in a sprayed large bowl, cover with plastic wrap, and let it rise for 90 minutes until doubled in size.
- Transfer the dough to a floured surface, divide in half, and roll each half into a ½-inch thick rectangle.
- Melt the remaining 4 Tbsp butter and brush half over the rectangles. Cut each rectangle in half lengthwise.
- Fold the dough in half, leaving ½-inch unfolded. Cut into 4 pieces each, resulting in 16 rolls.
- Place the rolls in the greased dish and cover with plastic wrap. Let rise for another hour, preheating the oven to 350°F.
- Bake the rolls for 25 minutes until golden brown. Brush with remaining butter before serving.
Notes
Ensure the milk is warm but not hot to avoid killing the yeast.
Knead the dough thoroughly to achieve the right texture for fluffy rolls.
These rolls can be enjoyed fresh or stored in an airtight container for later.
