Ingredients

  • 1 large egg yolk (or 2 tablespoons cream as a substitute)
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon kosher salt
  • 1 and 1/2 cups powdered sugar
  • Pink, red, or green food coloring, optional

Instructions

  • Beat softened butter in a large bowl until creamy.
  • Gradually mix in heavy cream until slightly curdled.
  • Gently mix in flour and salt until just combined.
  • Divide dough, wrap in plastic, and chill for 30 minutes.
  • Preheat oven to 375°F (190°C) and prepare work surface.
  • Roll out dough to 1/8 inch thick, cut with a cookie cutter.
  • Roll cookies in granulated sugar, place on baking sheets.
  • Prick cookies with a fork and bake for 7-8 minutes.
  • Beat butter for frosting until smooth, blend in egg yolk and vanilla.
  • Add powdered sugar and mix until creamy, adjusting consistency as needed.
  • Frost half the cookies and sandwich with the remaining cookies.
