- 1 pound ground mild Italian sausage
- ½ medium yellow onion, diced (approximately ½ cup)
- 1 can (28 ounces) diced tomatoes
- 2 tablespoons tomato paste
- 3 cups (720 g) chicken broth
- 2 teaspoons garlic, minced
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 bag (20 ounces) fresh cheese tortellini, refrigerated
- 1 cup (238 g) heavy cream
- 2 cups fresh spinach
- Parmesan cheese, shaved, for garnish
Instructions
- Brown the Italian sausage in a large pot over medium heat until no longer pink.
- Sauté the diced onions until translucent, about 3-5 minutes.
- Combine diced tomatoes, tomato paste, chicken broth, garlic, seasoning, salt, and pepper. Bring to a simmer.
- Stir in tortellini and heavy cream until combined.
- Add spinach and stir until it wilts.
- Simmer until tortellini is tender, about 8-10 minutes. Serve garnished with parmesan.
Notes
For a spicier soup, substitute hot Italian sausage for mild.
To add freshness, incorporate herbs like basil or parsley before serving.
Avoid overcooking tortellini; they should remain al dente for optimal texture.
