  • 1 bag (20 ounces) fresh cheese tortellini, refrigerated
  • 1 cup (238 g) heavy cream
  • 2 cups fresh spinach
  • Parmesan cheese, shaved, for garnish

Instructions

  • Brown the Italian sausage in a large pot over medium heat until no longer pink.
  • Sauté the diced onions until translucent, about 3-5 minutes.
  • Combine diced tomatoes, tomato paste, chicken broth, garlic, seasoning, salt, and pepper. Bring to a simmer.
  • Stir in tortellini and heavy cream until combined.
  • Add spinach and stir until it wilts.
  • Simmer until tortellini is tender, about 8-10 minutes. Serve garnished with parmesan.
