- 1 and 2/3 cup heavy cream (chilled)
- About 1/3 cup powdered sugar (to taste)
- 1 teaspoon vanilla extract
- 3 cups graham cracker crumbs
- ¼ cup strawberry jam
- ½ cup + 2 tablespoons unsalted butter (melted)
- Red gel food coloring
- ½ cup unsalted butter (softened)
- 8 oz. cream cheese (softened)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2/3 cup diced fresh strawberries
- 1 cup of whipped cream
- 2 (3 oz. packages) berry blue Jello (or your favorite flavor)
- 1 and 1/4 cup boiling water
- 2 cups blueberry pie filling
- 1 cup canned crushed pineapple (drained)
- 2 ½ cups whipped cream
- Fresh strawberries (halved)
- Fresh blueberries
- ¼ cup chocolate chips
Instructions
- Combine graham cracker crumbs, strawberry jam, melted butter, and red food coloring in a bowl.
- Press the mixture into the bottom of a 13 x 9 x 2 inch dish and freeze.
- Beat heavy cream with powdered sugar and vanilla until stiff peaks form, reserving 1 cup.
- Cream softened cream cheese, remaining powdered sugar, and butter, then fold in reserved whipped cream and strawberries.
- Spread cheesecake mixture over crust and refrigerate.
- Mix berry blue Jello with boiling water until dissolved, then let cool.
- Stir in crushed pineapple and blueberry pie filling once cooled.
- Spread jello mixture over cheesecake layer and refrigerate until set.
- Top with remaining whipped cream and fresh berries before serving.
Notes
For best results, ensure whipped cream is stiff when layering.
Allow each layer to set completely to maintain structure.
