No Bake Icebox Cake

Ingredients

  • 3 1/2 cups cold heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 box graham crackers
  • 4 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  • Chill the mixing bowl in the freezer for a few minutes.
  • Wash and prepare the mixed berries, slicing strawberries if needed.
  • Combine cold heavy whipping cream and powdered sugar in the chilled bowl and whip until stiff peaks form.
  • Divide the whipped cream and berries into parts for layering.
  • Spread a spoonful of whipped cream on the bottom of a glass pan.
  • Layer graham crackers on top, trimming as needed.
  • Add whipped cream mixture and a portion of mixed berries, pressing gently.
  • Continue layering until all ingredients are used, finishing with whipped cream.
  • Cover and refrigerate for at least 8 hours or overnight.
  • Serve chilled, garnished with additional berries.

Notes

Ensure heavy whipping cream is very cold for optimal whipping.
