Instructions
- Combine flour, baking powder, baking soda, cinnamon, ginger, and salt in a bowl.
- Beat eggs and brown sugar until creamy.
- Stir in buttermilk, melted butter, and vanilla until smooth.
- Fold wet mixture into dry ingredients until just combined.
- Gently fold in diced nectarines.
- Preheat oven to 375°F (190°C) and prepare muffin tin.
- Spoon batter into muffin cups, filling two-thirds full.
- Bake for 18-20 minutes, until golden and a toothpick comes out clean.
- Cool muffins in the tin for 5 minutes, then transfer to a wire rack.
Notes
Ensure butter is not too hot to avoid curdling the eggs.
Use ripe nectarines for the sweetest muffins.
