  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/3 cups buttermilk
  • 3/4 cup packed light brown sugar
  • 1/3 cup melted butter
  • 1 1/2 teaspoons vanilla extract
  • 1 cup diced fresh nectarine

Instructions

  • Combine flour, baking powder, baking soda, cinnamon, ginger, and salt in a bowl.
  • Beat eggs and brown sugar until creamy.
  • Stir in buttermilk, melted butter, and vanilla until smooth.
  • Fold wet mixture into dry ingredients until just combined.
  • Gently fold in diced nectarines.
  • Preheat oven to 375°F (190°C) and prepare muffin tin.
  • Spoon batter into muffin cups, filling two-thirds full.
  • Bake for 18-20 minutes, until golden and a toothpick comes out clean.
  • Cool muffins in the tin for 5 minutes, then transfer to a wire rack.

Notes

Ensure butter is not too hot to avoid curdling the eggs.
Use ripe nectarines for the sweetest muffins.
