Ingredients
Scale
- 2 tablespoons olive oil
- 2 cups yellow onion, diced
- 3 lbs ground beef (preferably 80/20 for optimal moisture)
- 1 cup bread crumbs
- 3 large eggs, beaten
- 1/2 cup whole milk
- 1 tablespoon salt (adjust to taste)
- 1 tablespoon black pepper (or to taste)
- 1 tablespoon onion powder
- 1 1/2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- 1 cup ketchup (plus 1 1/2 cups for glaze)
- 2 tablespoons Worcestershire sauce
- 3 tablespoons fresh chopped parsley
- 1/3 cup brown sugar
Instructions
- Preheat oven to 350°F and prepare a half-sheet pan with foil and cooking spray.
- Sauté diced onions in olive oil until tender and brown, then transfer to a bowl.
- Combine ground beef, bread crumbs, beaten eggs, milk, spices, ketchup, Worcestershire sauce, and parsley with sautéed onions, mixing gently.
- Shape the mixture into a log and place on the prepared baking sheet.
- Prepare glaze by mixing brown sugar and remaining ketchup, then spread over meatloaf.
- Cover with foil and bake for 45 minutes to 1 hour, until internal temperature reaches 160°F.
- Let rest for 10-15 minutes before slicing, then serve with garnished parsley.
Notes
Use 80/20 ground beef for optimal moisture.
Gentle mixing is key to a tender meatloaf.
Resting the meatloaf before slicing enhances juiciness.
