- 2 ⅓ cups all-purpose flour
- 2 teaspoons corn starch
- 1½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon fine sea salt
- ¾ cup unsalted butter
- 1 cup granulated sugar
- ½ cup light brown sugar
- 1 egg
- 1 egg yolk
- 1 to 1 ½ teaspoons mint extract
- 5 to 10 drops green gel food coloring
- 1 cups semi-sweet chocolate chips
- 2 ounces bittersweet chocolate
Instructions
- Combine the flour, corn starch, baking powder, baking soda, and salt in a bowl and whisk until mixed.
- In a separate bowl, beat the butter with granulated and brown sugar on medium speed for 3 to 4 minutes until fluffy.
- Add the egg, egg yolk, mint extract, and food coloring to the butter mixture, and beat until creamy.
- Gradually mix in the flour mixture until just combined.
- Stir in the chocolate chips and chopped chocolate.
- Scoop out about 3 tablespoons of dough per cookie, roll into smooth balls, and chill in the refrigerator for at least one hour or overnight.
- Preheat your oven to 325°F (160°C).
- Arrange the cookie dough balls on a lined baking sheet, keeping them about 3 inches apart.
- Bake for 12 to 15 minutes until the edges are slightly brown.
- Cool on the baking sheet for 10 minutes before transferring to wire racks.
Notes
Make sure your butter is at room temperature for better mixing.
Chilling the dough helps to achieve a chewier cookie texture.
Adjust the amount of mint extract according to taste.
These cookies pair well with a glass of milk or a scoop of ice cream.
