- 1 tablespoon olive oil
- 1/3 cup yellow onion, diced
- 1/3 cup bell pepper, diced
- 1 pound ground beef (85/15 lean)
- 1/2 cup Italian bread crumbs
- 1 large egg
- 1/4 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup tomato sauce
- 1/4 cup barbecue sauce
Instructions
- Preheat oven to 350°F (175°C).
- Sauté diced onion and bell pepper in olive oil until soft, about 5 minutes.
- In a bowl, mix ground beef, bread crumbs, egg, cream, garlic powder, salt, and pepper, then fold in sautéed veggies.
- Divide mixture into 12 portions, shape into balls, and place in greased muffin tin.
- Mix tomato sauce and barbecue sauce, then spoon over meatballs.
- Bake for 15-18 minutes until internal temperature reaches 160°F (70°C). Let rest for 5 minutes before serving.
Notes
Use lean ground beef for a juicy mini meatloaf without excess grease.
Feel free to add herbs or spices for extra flavor.
For a spicier glaze, mix in Worcestershire or hot sauce.
