- 2 pie crusts, store-bought or homemade
- 2 1/2 cups (350 g) apples, peeled and diced into 1/2 inch pieces (about 2 large apples)
- 2 tbsp (28 g) unsalted butter
- 1/4 cup (55 g) brown sugar, packed
- 2 tbsp (25 g) granulated white sugar
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 1 egg, beaten (for egg wash)
- 1/4 cup (50 g) granulated white sugar (for topping)
- 1/4 tsp ground cinnamon (for topping)
- 1/8 tsp ground nutmeg (for topping)
- 1/8 tsp ground allspice (for topping)
- 1/8 tsp ground ginger (for topping)
- Tiny pinch of ground cloves (for topping)
- Turbinado sugar, for sprinkling
Instructions
- Combine diced apples, butter, brown sugar, granulated sugar, vanilla, and spices in a saucepan. Cook over medium heat for 15-18 minutes until tender.
- Set filling aside to cool completely.
- Roll out the pie crusts on a floured surface and cut out 20 apple shapes using a cookie cutter.
- Transfer 10 cutouts to baking sheets, add a tablespoon of filling to each, brush edges with egg wash, and cover with another cutout.
- Seal edges with a fork and cut vents on top. Chill in the fridge for 20 minutes.
- Preheat oven to 400°F (200°C) and mix sugar with spices for topping.
- Brush tops with egg wash, sprinkle with spiced sugar mixture and turbinado sugar.
- Bake for 16-19 minutes until golden brown, then cool for 5 minutes on a sheet before transferring to a wire rack.
Notes
Use crisp and fresh apples for the best flavor and texture.
Chill the assembled pies to maintain shape while baking.
Adjust spices according to personal taste for a customized flavor.
