Instructions

  • Heat the corn in a skillet over medium heat until warm, optionally charring for added flavor.
  • In a large bowl, combine the cooked corn with mayonnaise, sour cream, lime juice, and chili powder.
  • Fold in most of the cotija cheese, leaving some for topping.
  • Spoon the mixture into individual serving cups.
  • Top each cup with reserved cotija cheese and optional chili powder or Tajin.
