  • 1/2 cup diced yellow onion
  • 1 red bell pepper, diced
  • Kosher salt and freshly ground black pepper to taste (approximately 1 – 1 1/2 teaspoons kosher salt)
  • 4 ounces diced green chiles
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 cup cilantro, chopped
  • 1/2 cup shredded cheese

Instructions

  • Heat avocado oil in a large skillet over medium-high heat.
  • Add cubed potatoes and cook for about 6 minutes until golden and tender.
  • Push potatoes to one side and add ground beef; crumble and cook until browned.
  • Incorporate diced onion and red bell pepper; season with salt and pepper.
  • Stir in green chiles, chili powder, ground cumin, smoked paprika, and cilantro.
  • Mix everything and continue cooking for another 6-8 minutes until fully cooked.
  • Top with shredded cheese and cover until melted.

Notes

Add jalapeños for a spicy kick if desired.
Ensure potatoes are cut uniformly for even cooking.
