- 1 pound ground chicken
- 1 large egg
- 1/2 cup panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 tablespoons olive oil (for frying)
- 4 cloves garlic (minced)
- 1/2 cup dry white wine
- 1 cup heavy/whipping cream
- 1 tablespoon tomato paste
- 1/3 cup sun-dried tomatoes (chopped)
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed red pepper flakes
- 1 teaspoon cornstarch
- A small handful of fresh basil (chopped/torn)
- Salt and pepper to taste
Instructions
- Mix together ground chicken, egg, panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and pepper.
- Roll into 1-inch meatballs and place on a lined baking sheet.
- Heat olive oil in a skillet and fry the meatballs in batches until browned.
- Remove excess oil, then sauté minced garlic and deglaze with white wine.
- Combine cornstarch with water, then mix in heavy cream and tomato paste. Add sun-dried tomatoes, oregano, and crushed red pepper flakes.
- Return meatballs to the skillet, coat with sauce, and simmer until fully cooked.
- Garnish with fresh basil before serving.
Notes
Chill the meatball mixture before shaping for easier handling.
You can mix ground chicken with turkey for added flavor.
Adjust sauce seasonings according to your taste.
