Ingredients

  • 10 honey graham crackers (20 squares), broken into pieces
  • 2 tablespoons granulated sugar
  • 5 tablespoons unsalted butter, melted
  • 3 cups fresh mango, peeled and diced (about 2 mangoes)
  • 1 (14 ounce) can sweetened condensed milk
  • ½ teaspoon Key lime zest
  • 3 tablespoons Key lime juice (from about 6 Key limes)
  • 4 large egg yolks
  • ¼ teaspoon salt
  • 1 cup heavy cream
  • 1 tablespoon confectioners’ sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F.
  • Blend graham crackers and sugar in a food processor and mix in melted butter.
  • Press crumb mixture into a tart pan and bake for 10-12 minutes until golden.
  • Cool the crust completely before adding filling.
  • Pulse diced mango in a food processor until smooth, then strain.
  • Whisk together strained mango puree, sweetened condensed milk, Key lime zest, juice, egg yolks, and salt.
  • Pour mixture into cooled crust and bake for 25-28 minutes until edges set.
  • Cool for 1 hour, then refrigerate for at least 2 hours.
  • Whip heavy cream with confectioners' sugar and vanilla until stiff peaks form.
  • Serve tart chilled with whipped cream and optional fresh berries or mint.
