- 10 honey graham crackers (20 squares), broken into pieces
- 2 tablespoons granulated sugar
- 5 tablespoons unsalted butter, melted
- 3 cups fresh mango, peeled and diced (about 2 mangoes)
- 1 (14 ounce) can sweetened condensed milk
- ½ teaspoon Key lime zest
- 3 tablespoons Key lime juice (from about 6 Key limes)
- 4 large egg yolks
- ¼ teaspoon salt
- 1 cup heavy cream
- 1 tablespoon confectioners’ sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F.
- Blend graham crackers and sugar in a food processor and mix in melted butter.
- Press crumb mixture into a tart pan and bake for 10-12 minutes until golden.
- Cool the crust completely before adding filling.
- Pulse diced mango in a food processor until smooth, then strain.
- Whisk together strained mango puree, sweetened condensed milk, Key lime zest, juice, egg yolks, and salt.
- Pour mixture into cooled crust and bake for 25-28 minutes until edges set.
- Cool for 1 hour, then refrigerate for at least 2 hours.
- Whip heavy cream with confectioners' sugar and vanilla until stiff peaks form.
- Serve tart chilled with whipped cream and optional fresh berries or mint.
Notes
Use fresh, ripe mangoes for the best flavor.
Chill thoroughly for optimal texture and taste.
Can substitute mango with other tropical fruits for variations.
