- 350 ml coconut milk (or milk of choice)
- 1 ½ tbsp maple syrup
- ½ tsp vanilla extract
- 65 g chia seeds (about 6 tbsp)
- ½ pink dragon fruit (blended)
- 1 large Alfonso mango
- Vanilla coconut yogurt (for layering)
- Extra chopped mango (for garnish)
Instructions
- Mix coconut milk, maple syrup, and vanilla extract in a jug until combined.
- Stir in chia seeds and let rest for at least 4 hours or overnight, stirring occasionally.
- Blend the pink dragon fruit until smooth.
- Puree the mango until smooth.
- Layer chia pudding, dragon fruit puree, and vanilla coconut yogurt in a glass.
- Top with chopped mango and chia seeds or shredded coconut.
Notes
Stir the chia pudding every couple of hours while it sets to prevent clumping.
Use ripe fruits for the best flavor and sweetness.
Adjust sweetness with maple syrup based on preference.
