Ingredients

  • 2½ cups all purpose flour
  • 1½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • 1 ½ cups desiccated coconut
  • 1 cup salted butter softened to room temp
  • ¾ cup cane sugar or granulated
  • 2 large eggs
  • 1½ teaspoon vanilla extract
  • ½ teaspoon almond extract or more vanilla
  • 1 tablespoon freshly grated orange zest
  • 810 ounce jar apricot preserves or other fruit jam
  • 1 tablespoon powdered sugar for topping

Instructions

  1. Preheat the oven to 350ºF and position a rack in the middle. Line a 9×13 baking pan with parchment paper.
  2. Sift together flour, baking powder, and cinnamon in a bowl, then add kosher salt and coconut. Whisk and set aside.
  3. In an electric mixer, beat the softened butter and sugar for 5 minutes until pale and fluffy. Add eggs one at a time, mixing well after each addition. Incorporate vanilla, almond extract, and orange zest until well mixed.
  4. With the mixer on low, gradually add the flour mixture until a dough forms. Avoid overmixing.
  5. Remove ¼ of the dough, form it into a thick disk, and wrap in plastic wrap. Place the remaining dough in the freezer for 15-20 minutes.
  6. Press the remaining dough into the bottom of the prepared baking dish to form an even layer.
  7. If needed, microwave the apricot preserves for 20 seconds to loosen. Spread dollops of preserves over the dough, leaving a small border.
  8. Using a box grater, grate the chilled dough over the preserves or crumble it by hand. Spread evenly on top.
  9. Bake for 25-28 minutes until the top is slightly golden brown. Optionally, broil for 30-45 seconds to enhance browning. Let cool for 30 minutes before cutting into bars. Dust with powdered sugar if desired.

Notes

For best results, use fresh jam that is easy to spread.
Feel free to substitute the apricot preserves with other fruit jams according to your preference.
The crumble bars keep well in an airtight container at room temperature for up to a week.
