- 1 cup plain yogurt
- ½ cup milk
- ½ cup mild flavored oil or melted butter
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- ½ cup light brown sugar

- ¼ cup sprinkles
Instructions
- Preheat the oven to 400°F (200°C).
- Grease your mini muffin cups with cooking spray.
- In a bowl, mix yogurt, milk, oil or butter, eggs, and vanilla until blended.
- Gradually mix in flour, sugar, baking soda, and salt until combined.
- Gently fold in the sprinkles.
- Fill the muffin cups about ¾ full with batter.
- Bake for 9-11 minutes until a toothpick comes out clean.
- Cool in the pans for 10 minutes, then transfer to a wire rack.
Notes
Ensure ingredients are at room temperature for better mixing.
Avoid overmixing the batter for fluffier muffins.
