Ingredients

  • 1 cup plain yogurt
  • ½ cup milk
  • ½ cup mild flavored oil or melted butter
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • ½ cup light brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup sprinkles

Instructions

  • Preheat the oven to 400°F (200°C).
  • Grease your mini muffin cups with cooking spray.
  • In a bowl, mix yogurt, milk, oil or butter, eggs, and vanilla until blended.
  • Gradually mix in flour, sugar, baking soda, and salt until combined.
  • Gently fold in the sprinkles.
  • Fill the muffin cups about ¾ full with batter.
  • Bake for 9-11 minutes until a toothpick comes out clean.
  • Cool in the pans for 10 minutes, then transfer to a wire rack.
