- 1/2 cup graham cracker crumbs
- 2 tbsp melted butter
- 1 tbsp sugar
- 1/2 cup heavy whipping cream
- 1/2 cup lemon Greek yogurt (or lemon curd mixed with whipped cream)
- 1 tbsp powdered sugar
- 1/2 tsp lemon extract
- 1/4 cup lemon curd
- 1 1/2 cups white chocolate or yellow candy melts
- Yellow food coloring (if using white chocolate)
Instructions
- Combine graham cracker crumbs, melted butter, and sugar in a bowl.
- Whip heavy cream until soft peaks form.
- Mix lemon yogurt (or curd and cream), powdered sugar, lemon extract, and lemon curd; fold in whipped cream.
- Preheat oven to 400°F (200°C) and pipe choux pastry onto a baking sheet.
- Bake for 20-25 minutes until golden.
- Cool, slice in half, and fill with lemon cream mix.
- Melt chocolate or candy melts and coat the tops of pastries.
Notes
Ensure all ingredients are at room temperature.
Do not open the oven door while baking.
Consider experimenting with different citrus fruit fillings.
