Instructions

  1. In a medium saucepan, heat the heavy cream and granulated sugar over medium-high heat, stirring until the sugar dissolves and the mixture reaches a boil.
  2. Reduce the heat to maintain a steady boil for 5 minutes, watching closely to prevent boiling over. Then, remove from heat and mix in the lemon juice and vanilla extract. Allow to cool for 15 minutes.
  3. Stir the mixture well, then transfer it evenly into eight small ramekins or halved lemons. Refrigerate for 2 hours, or until set.
  4. Before serving, garnish each posset with fresh berries and mint leaves.

Notes

Make sure to watch the cream closely while boiling to avoid overflow.
Feel free to use a variety of berries for garnishing.
