- ⅔ cup granulated sugar
- ⅓ cup fresh lemon juice
- ¼ teaspoon vanilla extract

Instructions
- In a medium saucepan, heat the heavy cream and granulated sugar over medium-high heat, stirring until the sugar dissolves and the mixture reaches a boil.
- Reduce the heat to maintain a steady boil for 5 minutes, watching closely to prevent boiling over. Then, remove from heat and mix in the lemon juice and vanilla extract. Allow to cool for 15 minutes.
- Stir the mixture well, then transfer it evenly into eight small ramekins or halved lemons. Refrigerate for 2 hours, or until set.
- Before serving, garnish each posset with fresh berries and mint leaves.
Notes
Make sure to watch the cream closely while boiling to avoid overflow.
Feel free to use a variety of berries for garnishing.
The possets can be prepared a day in advance for convenience.
