Instructions
- Mix crushed Nilla Wafers, melted butter, and granulated sugar; press into cups for crust.
- Blend fresh lemon juice, zest, egg yolks, sugar, and cornstarch; cook until thick for lemon curd.
- Beat heavy cream to stiff peaks; in another bowl, mix cream cheese, powdered sugar, lemon juice, and zest, then fold in whipped cream.
- Assemble by layering cheesecake filling, lemon curd, and whipped cream in cups.
Notes
Chill parfaits for at least 30 minutes before serving for enhanced flavor.
Ensure all ingredients are at room temperature for better mixing.
