- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
- 2 large lemons, juiced and zested
- 3/4 cup granulated sugar
- 3 large eggs
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- Combine oats, flour, brown sugar, melted butter, and salt in a bowl, and stir until crumbly.
- Press the mixture into the bottom of a greased 8×8 inch baking pan.
- Whisk together lemon juice, zest, granulated sugar, eggs, flour, and baking powder in a separate bowl until smooth.
- Pour the lemon filling over the crust and smooth it out.
- Sprinkle the remaining oat mixture over the lemon filling.
- Bake for 30-35 minutes until golden brown.
- Let cool completely, then cut into squares.
Notes
Ensure the butter is melted but not too hot when mixing.
Using fresh lemons enhances the flavor significantly.
Allow the bars to cool completely for easier cutting.
