  • 3 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder

Instructions

  • Preheat the oven to 350°F (175°C).
  • Combine oats, flour, brown sugar, melted butter, and salt in a bowl, and stir until crumbly.
  • Press the mixture into the bottom of a greased 8×8 inch baking pan.
  • Whisk together lemon juice, zest, granulated sugar, eggs, flour, and baking powder in a separate bowl until smooth.
  • Pour the lemon filling over the crust and smooth it out.
  • Sprinkle the remaining oat mixture over the lemon filling.
  • Bake for 30-35 minutes until golden brown.
  • Let cool completely, then cut into squares.
