- 1 lb leftover turkey, shredded or diced
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, minced
- 1 ¼ tablespoons curry powder (mild or medium)
- 2 teaspoons Garam Masala
- ¼ teaspoon turmeric
- ¼ teaspoon ground coriander
- 14 oz can chopped tomatoes (or passata)
- 14 oz can coconut milk (light or regular)
- 2 cups fresh spinach
- ½ bunch fresh coriander, chopped
- Juice of 1 lime
Instructions
- Heat olive oil in a saucepan and sauté onion, garlic, and ginger for 5 minutes.
- Stir in curry powder, Garam Masala, turmeric, and ground coriander.
- Add chopped tomatoes and coconut milk, stirring to combine.
- Incorporate the leftover turkey and let it simmer for 10 minutes.
- Add spinach and cook until wilted, about 5 minutes.
- Stir in fresh coriander and lime juice before serving.
Notes
For creaminess, use full-fat coconut milk.
Adjust spice levels to suit your taste.
