  • 2 teaspoons Garam Masala

  • ¼ teaspoon ground coriander
  • 14 oz can chopped tomatoes (or passata)
  • 14 oz can coconut milk (light or regular)
  • 2 cups fresh spinach
  • ½ bunch fresh coriander, chopped
  • Juice of 1 lime

Instructions

  • Heat olive oil in a saucepan and sauté onion, garlic, and ginger for 5 minutes.
  • Stir in curry powder, Garam Masala, turmeric, and ground coriander.
  • Add chopped tomatoes and coconut milk, stirring to combine.
  • Incorporate the leftover turkey and let it simmer for 10 minutes.
  • Add spinach and cook until wilted, about 5 minutes.
  • Stir in fresh coriander and lime juice before serving.

Notes

For creaminess, use full-fat coconut milk.
