- 1 pound strawberries, finely diced (2 ¾ cups total) – divided into 2 cups and ¾ cup
- ¼ cup cane sugar or brown sugar
- Squeeze of lemon juice
- 2–3 cups unsweetened non-dairy milk (like soy or almond)
Instructions
- Macerate ¾ cup of strawberries with 1 tablespoon of sugar for a few minutes.
- Combine 2 cups of strawberries with 3 tablespoons of sugar and lemon juice in a saucepan, heat until boiling, then simmer for about 10 minutes.
- Let the strawberry syrup cool in the fridge.
- In a tall glass, add 2-3 tablespoons of cooled strawberry syrup, followed by ¾ cup non-dairy milk and ice cubes.
- Top with macerated strawberries, stir gently, and enjoy.
Notes
Use ripe strawberries for the best flavor.
Adjust sugar to your sweetness preference.
Chill the non-dairy milk for a refreshing drink.
