- 4 medium carrots, julienned

- 3 tablespoons apple cider vinegar

- 2 green onions, finely chopped (optional)
Instructions
- Peel and julienne the carrots into thin strips.
- Combine julienned carrots with salt and let sit for 15-20 minutes.
- Whisk together apple cider vinegar, sugar, sesame oil, garlic, and pepper.
- Rinse salted carrots under cold water and drain.
- Toss carrots with the dressing until well coated.
- Sprinkle with sesame seeds and green onions, then mix gently.
- Refrigerate for at least 30 minutes before serving.
Notes
Use fresh carrots for the best texture.
Adjust sugar to taste for desired sweetness.
The salad can be made in advance for enhanced flavor.
