- 7 ripe green kiwis
- ⅓ cup sugar
- ¼ cup canola oil or sunflower oil
- ¼ cup water
- Zest of 1 lime
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 1 cup coconut milk
- 1 cup soy milk
- ½ cup sugar (for custard)
- ⅓ cup cornstarch
- 1 teaspoon vanilla extract
- Peel of 1 lime
- ⅛ teaspoon turmeric (for color, optional)
Instructions
- Preheat the oven to 350°F (180°C) and prepare the tart pan with parchment paper.
- Mix flour, baking powder, and salt in a bowl and set aside.
- In a separate bowl, combine lime zest, water, oil, and sugar.
- Gradually mix dry ingredients with wet ingredients to form dough.
- Transfer dough to the tart pan, flatten it, trim excess, and poke holes in it.
- Bake for about 18 minutes until golden, then cool.
- In a saucepan, whisk coconut milk, soy milk, sugar, vanilla, turmeric, and lime peel until cornstarch dissolves.
- Cook over medium heat until the mixture thickens into custard, then cool slightly.
- Pour custard into the crust and spread evenly.
- Peel and slice kiwis and arrange them on top of the custard.
- Serve immediately or store in the fridge, adding kiwi slices just before serving.
Notes
Ensure the crust is fully cooled before adding the custard.
Use ripe kiwis for maximum sweetness.
