- 8 large eggs
- ¼ cup milk (remove ¼ cup for buffalo variation)
- ½ – 1 teaspoon salt (to taste)
- ½ teaspoon black pepper
- ¼ cup white onion, finely diced
- ⅔ cup baby spinach, roughly chopped
- 4 strips bacon (pork or turkey), cooked and crumbled
- ¼ – ⅓ cup shredded cheddar cheese
- 2 links cooked chicken sausage, chopped into tiny pieces
- ½ – ⅔ cups white or baby bella mushrooms, diced
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ cup bell pepper (any color), deseeded and chopped into small pieces
- ¼ cup buffalo sauce (for buffalo variation)
- ¼ cup chopped green onions
- 1 cup cooked or rotisserie chicken, chopped into small pieces
Instructions
- Preheat oven and prepare muffin tin.
- Whisk together eggs and milk in a bowl.
- Add in remaining ingredients and seasonings.
- Pour egg mixture into muffin cups, filling ¾ full.
- Bake until set and lightly browned.
- Allow to cool before removing from the tin.
Notes
Use fresh ingredients for the best flavor.
Store leftovers in an airtight container for up to 5 days.
Egg bites can be frozen for up to 2 months.
