Ingredients

  • 8 large eggs
  • ¼ cup milk (remove ¼ cup for buffalo variation)
  • ½1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • ¼ cup white onion, finely diced
  • ⅔ cup baby spinach, roughly chopped
  • 4 strips bacon (pork or turkey), cooked and crumbled
  • ¼ cup shredded cheddar cheese
  • 2 links cooked chicken sausage, chopped into tiny pieces
  • ½ cups white or baby bella mushrooms, diced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup bell pepper (any color), deseeded and chopped into small pieces
  • ¼ cup buffalo sauce (for buffalo variation)
  • ¼ cup chopped green onions
  • 1 cup cooked or rotisserie chicken, chopped into small pieces

Instructions

  • Preheat oven and prepare muffin tin.
  • Whisk together eggs and milk in a bowl.
  • Add in remaining ingredients and seasonings.
  • Pour egg mixture into muffin cups, filling ¾ full.
  • Bake until set and lightly browned.
  • Allow to cool before removing from the tin.

Notes

Use fresh ingredients for the best flavor.
Store leftovers in an airtight container for up to 5 days.
