Ingredients

- 1 pound Italian sausage
- 1 onion, chopped
- ¼ cup minced garlic
- 1 ½ cups sliced carrots (about 3 large)
- 45 ounces great northern beans (3, 15 oz. cans)
- 4 cups chicken broth
- ½ teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon salt
- ¼ teaspoon pepper
- 2 cups chopped kale (about ½ a bunch, de-stemmed and chopped)
- 1 cup half-and-half (can substitute with milk)
Instructions
- Brown the Italian sausage and chopped onion in a large pot over medium heat.
- Add sliced carrots and minced garlic, cooking for about a minute.
- Add great northern beans, oregano, basil, salt, pepper, and chicken broth. Stir well.
- Cover and let the mixture simmer for 10-15 minutes.
- Stir in chopped kale and half-and-half until the kale wilts.
Notes
Feel free to customize the type of sausage to your liking.
Fresh kale enhances the texture and nutritional value.
