- 1 lb. jalapeno peppers (about 10 jalapenos)
- 1/2 onion, chopped
- 2 garlic cloves, peeled
- 3/4 cup white vinegar
- 1/2 cup water
- Juice of 1 lime
- 1/2 teaspoon salt
- 1 teaspoon Mexican oregano
- 1/4 teaspoon cumin (optional)
- 8–10 cilantro sprigs
- Freshly cracked black pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Sauté chopped onion and garlic until soft.
- Add Mexican oregano, black pepper, and optional cumin.
- Add roughly chopped jalapenos, vinegar, water, and salt.
- Bring mixture to a gentle simmer for 10 minutes.
- Transfer to a blender, add lime juice and cilantro, and blend.
- Pour sauce into bottles or a jar and refrigerate.
Notes
Wash hands after handling jalapeños to avoid irritation.
Adjust jalapeño quantity for a milder sauce.
Experiment with different herbs for unique flavors.
