Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with liners.
- Blend the yogurt, oil, banana, vanilla extract, and spinach until smooth.
- Whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt in a separate bowl.
- Combine the wet and dry ingredients gently until just mixed.
- Divide the batter into the muffin pan and bake for 15-16 minutes or until a toothpick comes out clean.
Notes
Use a ripe banana for more sweetness.
Ensure the spinach is well-blended for good texture.
Let muffins cool in the pan briefly before moving to a wire rack.
